Fermbucha is an alcohol-free kombucha powder obtained by fermenting black tea through a symbiotic culture of bacteria and yeasts (SCOBY*). This powder consists of the metabolites glucuronic acid and D-saccharic acid-1,4-lactone as well as other bioactive substances such as highly absorbable flavonoids that serve as SOD-like substances. It also contains specific polyphenols from black tea in their aglycon form.

The content of total polyphenols and flavonoids of black tea increases after 21 days of fermentation with SCOBY at 28°C.
