The flavonoids are broken down into smaller active antioxidant molecules by fermentation
The SOD-like substances are not destroyed in the digestive tract as is the case with oral ingestion of superoxide dismutase (SOD). These antioxidants have a similar function to SOD.

High-performance liquid chromatography (HPLC) is applied to identify and quantify tyrosol changes before and after fermentation. Fermodiola™, fermented rhodiola, contains 7.2 times more tyrosol than non-fermented rhodiola.

Tyrosol is an aglycone of salidroside. Salidroside is one of the major phenolic glycosides in rhodiola and is used as one of the criteria for evaluating the quality of rhodiola.

Deglycosylation is an important step in the absorption and metabolism of dietary phenolic glycosides.
